National Tortilla Chip Day – Well, hm. This celebration SHOULD have, by all rights, been combined with yesterday’s Margarita Day – at least that’s what I think. However the creator’s of obscure and bizarre holidays didn’t think so. Tortilla Chip day is a holiday with a crunch – hahaha one might even say that it is a corny holiday. Sorry – couldn’t resist. Just a few decades ago Americans seldom ate Corn Chips and Salsa, but its popularity has grown by leaps and bounds and today’s holiday is a tribute to the rise in popularity of one of America’s favorite munchies. I’d say that around here, my favorite restaurant chips would have to be at this place in Seattle – the name escapes me right now – but it’s on the 4th floor of the Pacific Place Mall. They spritz the chips right when they get out of the fryer with Rosie’s Lime Juice – OH MY GOSH, they are delicious. We don’t go across to the city all that often, but when we do, that’s one of the places we enjoy going.
Today is also the 6th Anniversary of the day my hubby and I were married. It certainly doesn’t feel like it was that long ago, but it was! We are spending the day at the zoo – something I haven’t done with just him . . . well . . . EVER, followed by a meal out eating something decadently not good for us after weeks on a strict eating plan. So happy anniversary Honey – I love you and can’t wait to spend the day with you having all the fun we usually have when we are together. I would like everyone to have a lovely, wonderful, happiness filled day. Enjoy the creation God made, and appreciate the beauty around you. There may not have been many bizarre holidays for today, but we can celebrate the beauty of life and everything around us every day of the week. God bless you and I’ll see you tomorrow!
